How to make homemade sourdough starter from Scratch?

  • How to make Starter Recipe
    • What you will need:
      • Glass Jar with Lid
      • 1/2 cup all purpose flour
      • 1/2 cup of luke warm water
    • Instructions:
      • Combine the flour and water in your jar.
      • Mix. It should look like a thick pancake consistency.
      • Put your lid on the jar
      • Feed your starter daily with water and all purpose flour. NOTE: You can discard some of your starter if you do not have enough room. You just need to LEAVE 1/2 a cup of your starter to feed. For a thriving starter it is equal parts: starter:water:flour
      • Within time, your starter should start to double after feedings. Getting bubbles. Becoming active.

Homemade Sourdough Artisan Bread

The BEST Sourdough Bread Recipe from Scratch by Nicole Martinez. This recipe includes how to make your own sourdough starter from scratch. Step-by-step instructions on how to make homemade sourdough + a how to video and audio. This recipe is great as is or you can add inclusions in as you like!

Course Side Dish
Servings 1 loaf

Ingredients

  • 150 grams active starter  see notes below for how to make your own starter.
  • 350 grams room temp/slightly warm water
  • 10  grams salt
  • 500 grams flour (I use all purpose flour)

Instructions

Making the Sourdough Dough

  1. Combine 150 grams of active starter and 350 grams room temp/slightly warm water. Mix until milky.

  2. Once you have the milky liquid, add in: 10 grams salt and 500 grams flour ( I use all purpose flour). Mix it into a shaggy dough (until all flour is incorporated)

  3. Cover with a kitchen towel or plastic wrap & let it sit for one hour.

Stretch and Folds

  1. Preform first set of stretch & folds (you can watch how to do stretch and folds in the below video)

  2. Cover & let dough sit 30-40 minutes 

  3. 2nd stretch and folds

  4. Cover & let set 30-40 minutes 

  5. 3rd stretch and folds

  6. Cover & let it sit to bulk ferment on your counter for 2-3 hours. *I typically know my dough is ready to pre-shape when I tip the bowl and see it start to slide out clean. Using the warm water when you are mixing your starter and water causes the bulk fermentation process to go a little faster. If you use cold water to mix, the bulk fermentation processes will go a bit slower.*

Shape your Sourdough Bread

  1. Dump your dough onto a light floured counter space and “pre -hape” your dough (you can watch how to do the shape in the below video)

  2. Let rest 20-30 minutes on the counter counter. Cover with a towel.  

  3. “Final shape” your dough and put into a bowl lined with a lightly floured towel.

  4. Cover with a towel or plastic wrap and put it in the fridge to “proof” over night up to 24 hours.

Baking your Sourdough Bread

  1. When ready to bake, preheat your oven to 450 and put your Dutch oven inside to heat up for 30 minutes.

  2. When the oven and the Dutch oven are hot dump the dough from the bowl onto parchment paper.

  3. Sprinkle with flour on top of the dough. Sore your bread. (Make sure to get a good “ear” score by cutting one deep long line somewhere on your dough!)

  4. Lift your dough with the parchment paper and put your dough with parchment paper into your Dutch oven.

  5. Then bake with the lid on, on top for 20 minutes.

  6. Then remove the lid from the dutch oven and bake for another 20 minutes! (You can play with that end time and go with your own desired doneness!)

  7. Remove your bread from the dutch oven by lifting the bread out with the parchement paper. Let the bread sit for one hour to cool! Enjoy!
