Spicy Smoked Duck Jerky

Learn how to make spicy duck or goose jerky. The jerky is made on the smoker, and is simple to make. It’s made with less than 10 ingredients that you probably already have on hand. Includes marinade recipe. This jerky is mild to medium heat with subtle sweetness, the perfect flavor combination. Making it the perfect family favorite snack.

Ingredients

  • 2 lbs skinless duck or goose breast (de-fatted)
  • 8 cloves minced garlic
  • 2 cups soy sauce 
  • 1 cup worcestershire sauce 
  • 1 cup brown sugar
  • 4 tsp onion powder
  • 1 tbsp red pepper flakes  can add 1 more additional tbsp for a more spicy flavor
  • 2 tbsp black pepper 
  • 12 oz. Corona Extra Beer or your favorite Mexican Beer, we have used Modelo as well

Instructions

  1. Slice your duck breast into roughly 1/4"-3/8" sized strips. (Whatever thickness you decide to make your jerky is up to you but make sure they are all cut proportionate thickness allowing jerky strips to cook the same amount of time.)

  2. Set meat aside.

  3. Make the marinade by combining all ingredients into a large bowl and mixing.

  4. Add your duck meat in a sealable container or ziplock bag, pour the mariande over the meat.

  5. Let refrigerate for at least 24 hours and up to 72 hours. (Our Jerky usually marinates about 48-72 hours)

  6. Set your smoker to smoke and let smoke for 5-10 minutes, then set the temperature to 180F.

  7. Remove the duck meat from the marinade and evenly distribute your duck meat onto the smoker grill grates.

  8. Smoke 5-8 hours OR to when you meat has the texture of jerky. Because smoking times can vary: Start Checking the jerky at about 2-3 hours, and every 30 minutes up to 8 hours. TIP:  Smoke times vary. Jerky should be dried out but still pliable/flexible.

  9. Remove meat from the smoker and into a sealable container, like tubberware container or ziplock bag.

  10. Seal the container with the jerky to let it sweat for about 1 hour.

  11. Keep sealed in an airtight container and can enjoy for up to 1 month. Enjoy!
