Easy Creamy & Cheesy Dutch Oven Potatoes with Bacon

This is the best Easy Creamy & Cheesy Dutch Oven Potatoes with Bacon recipe. It's a family favorite that is also, Kid-approved. You can make this while camping or at home. This side dish is ready to serve up in about 1 hour!

Ingredients

  • 6 - 8 Large Potatoes - about the size of a hand
  • Large Onion
  • tbsp Garlic Salt
  • 1 tsp pepper (or to taste)
  • 8 slices thick cut bacon
  • Cups  colby jack or sharp cheddar cheese
  • 2 16 oz cans Cream of Chicken Soup Or Homemade Cream of Chicken Soup (preferred if not camping)

Instructions

  1. You will need to start charcoal in a Chimney. While the charcoal is getting hot, start prepping ingredients.

  2. Cook bacon in skillet or oven (however you prefer). TIP: I try to make bacon, and extra of it with breakfast the morning we are making this or day before when camping! I suggest getting the bacon crispy so that it doesn't get soggy in the mixture. Dab off excess grease.

  3. While the bacon cooks. Peel and dice a large onion.  Wash and dice potatoes into uniformed chunks.

  4. In a large bowl or dutch oven liner (to cut down on dishes) combine sliced Onion, Potatoes, Cream of Chicken Soup and combine.  Sprinkle Garlic Salt, and black pepper then toss to coat.

  5. Dab off excess grease from cooked bacon. Add to the bowl of ingredients of Onion, Potatoes, and soup. Then add half of your cheese and combine.

  6. Once charcoal is ready. Add your combined mixture to a 10in or 12in Dutch Oven.

  7. Potatoes will cook for about 40-50 minutes.  Your thickness of the potatoes and tempature outside can vary cooking times.  You can check if they are done when you can easily poke into the potatoes with a fork.

  8. You can always add more coals to the top and/or bottom as charcoal burns down.  I find adding to the top is best, it can easily burn the potatoes on the bottom if too hot.

  9. Check potatoes, open the lid carefully to not spill any ash into potatoes. Test potatoes with a fork or knife.  If potatoes need additional time, place lid back on and allow them to cook until done.

  10. Once potatoes have cooked open the lid and sprinkle any additional cheese on top.  Replace lid and allow the cheese to melt, stir if desired and serve!
